With volcanic ash in the soil and low temperatures at night, Cauca is home to Colombia's most fertile lands and is currently cultivating coffees with world-class flavor. These Popayan beans' high-growing altitude in the Colombian Massif mountain range show from their nippy acidity and vibrant sweet notes. 

We roast this coffee on the lighter side to highlight its lively white grape acidity and smooth, delicate body.
